Uomaru

Fish from the port, sake from all over, and a counter you can stand at.

Uomaru Stand is a 2-minute walk from the east exit of JR Kusatsu Station, at 1-11-14 Oji. The kitchen sits in the middle of the room with the counter wrapped around it, so you watch the plate come up to heat from where you are sitting.

The fish comes directly from Tsuruga in Fukui and Tosa-Saga in Kochi. What arrives changes with the day, so the sashimi board changes with it. The one thing that does not change is the bonito: seared hard on the iron plate so that only the surface chars, and the inside stays raw.

Sixteen kinds of sake are on the list and they change regularly. There is a standing area as well as the counter, so stopping in for one glass on the way home is normal here. All 30 seats are non-smoking, and there is a terrace.

The iron plate comes up hot and fast, so the surface chars while the inside stays raw. We salt it rather than dress it, because the fish is the point.

The kitchen is in the middle and the counter runs around it, so from the counter you watch the food being made. Tables take up to eight. There is a standing area for a quick one, and a terrace outside.

All 30 seats are non-smoking. On Saturdays, Sundays and public holidays we open at 13:00, so an afternoon drink is possible. On the second Sunday of the month we open at 15:00.
